Chalkolat (chalkolat.com) is an independent website that explains chocolate in plain language — the science of how cacao develops flavor, what a cacao percentage really tells you, how dark, milk, white and ruby chocolate differ, what research does and doesn’t say about chocolate and health, and a few easy recipes to put it all to use.
The homepage has a quick reference for chocolate types, a flavor-pairing chart, tempering temperatures and a ganache ratio calculator that runs in your browser.
