What does “70% cacao” mean?

It’s the share of the bar’s weight that comes from the cacao bean (cocoa solids plus cocoa butter). The rest is mostly sugar. It says nothing on its own about bean quality or origin. Read understanding chocolate percentages.

Is white chocolate really chocolate?

White chocolate contains cocoa butter but no cocoa solids, which is why it has no brown color or bitter cacao flavor. Many countries still regulate it as a chocolate product.

What is ruby chocolate?

A pink chocolate with a fruity, berry-like taste, introduced commercially by Barry Callebaut in 2017.

Is dark chocolate healthy?

Cocoa contains flavanols that have been studied for possible cardiovascular effects, but chocolate is also high in sugar and fat. The evidence is mixed; see what the research actually says. This is not medical advice.
